
I had the absolute privilege to interview Sara Pahi for my Transform Your Wellness Podcast.
I met Sara a few weeks ago in Torquay when we went down the beach for an early morning dip in the ocean for some cold therapy. At the time my intuition told me that I wanted to know more about this woman as I felt she had an amazing fighting spirit. A few weeks later we connected via Zoom for this interview.
Sara is a mother, wife and she is currently studying to become a life coach.
She was diagnosed with a stage 3 breast cancer 2019 and have gone through 6 surgeries, including bilateral mastectomy & five months of chemotherapy.
She has 4 children (13-25). She is originally from New Zealand but has live in Australia the last 6 1/2years.

She’s worked in the health and fitness industry for most of her life and she was in the army reserve for a few years.
Sara has faced many challenges from mental health, suicide attempts, abuse and domestic violence, eating disorders and cancer.
Sara has learnt from every experience and she believes that she would not be the woman she is today without these experiences.
Sara’s passion now is to help others to connect to their potential and live life from there.

This recipe is so easy and quick to make. I just love it!

INGREDIENTS
- 1 medium Chopped Brown Onion
- 1 medium Chopped Carrot
- 1 medium Chopped Zucchini
- 3 teaspoons Moroccan Seasoning400 grams Canned Lentils, rinsed and drained
- 400 grams Diced Tomatoes
- 120 grams Baby Spinach4 large Eggs
INSTRUCTIONS
- Preheat oven to 200C.
- Lightly grease an ovenproof frying pan.
- Heat over medium heat.
- Add onion, carrot and zucchini, cook, stirring, for 5 mins or until onion softens.
- Add seasoning. Cook for 1 min or until aromatic.
- Add lentils, tomato and 185 ml water, cook, stirring, for 3 mins or until mixture comes to a simmer. Stir in spinach.
- 7 Make 4 indents in lentil mixture and crack 1 egg into each indent.
- 8 Bake for 10 mins or until eggs are cooked to your liking.
- 9 Sprinkle with dukkah and coriander and serve
Optional ingredient:

My diffuser has had a big "workout" this week. It has been on most of the day in my office.
My favourite blend this week was one I called the "Fresh Energy" Blend.
It had 3 drops of Purification, 3 drops of Lime, 2 drops of Spearmint and 2 drops of Lemon grass.
Wow! This blend made my room smell so amazing and I help energised.
Definitely a lovely combination.

What an incredible sunrise we had here in Torquay, Australia this morning. It was the best one I have ever seen and it made Winter Solstice extra special. 💕
